These tacos are GOOD. Don’t skip the step of browning the pork in a skillet. It seems like a lot of work but it is 1000000% worth it. Also don’t skip the pickled shallots. The pork cooks away in a crock pot so you don’t have to worry about it.
Pork Tacos with Cabbage Slaw and Pickled Shallots
Ingredients
Easy Slow Cooker Pulled Pork
- 2 lbs pork shoulder or butt, boston butt, picnic shoulder
- 1 can soda dark colored – coke, dr.pepper, root beer, diet coke
Cabbage Slaw
- 1/2 head green cabbage, sliced as thin as possible
- 3 tbsp white vinegar
- 1 tbsp sugar
- 1 tbsp salt
Pickled Shallots
- 1 shallot, sliced as thin as possible
- 1/4 cup white vinegar
- 1/4 cup water
- 1 tsp salt
- 1 tsp sugar
Instructions
Easy Slow Cooker Pulled Pork
- Season the pork with salt and peppers on both sides. Place into slow cooker.
- Pour the can of soda over the pork. Put the lid on the slow cooker.
- Cook on high for 5-6 hours or low for 7-8 hours.
- Shred the pork and discard and bones and fat. Save the juice in another container.
Cabbage Slaw
- Combine everything in a bowl and stir. Let sit for 15-20 minutes before serving.
Pickled Shallots
- Combine everything in a container with a lid. Stir to dissolve salt and sugar. Store in the refrigerator for a couple weeks.
