A cold, refreshing meal for when you’re craving comfort food in the hot hot heat of summer. Light enough to not weigh you down, but savory and familiar enough to bring some comfort, especially when sandwiched between two pillowy slices of bread.
Comfort food usually brings to mind cozy bowls of stew and thick slabs of meatloaf on a scoop of mashed potatoes. These kinds of foods are perfect for when there’s a chill in the air and it gets dark at 4 pm….. But not so much in August when it’s too hot to even think about turning on the stove. Enter chicken salad. A classic, comforting food that won’t leave you sweating in your kitchen.
Super simple, super yummy. Tender shredded chicken studded with crunchy bits of celery and shallot, mixed with a bit of mayo for some richness and a few splashes on red wine vinegar to brighten the whole thing up.

Pro tip: shred your chicken with a mixer to save some time and effort! Drop your cooked chicken breasts into the mixer bowl, fit it with the paddle attachment, turn it on to low, and in about 30 seconds you have perfectly shredded chicken! This also works with a large bowl and a handheld mixer.

Serve it on a bed of greens, sandwiched in between two slices of bread, or on top of crackers for a fun change.
Classic Chicken Salad
Ingredients
- 1 lb chicken breast, cooked and shredded
- 1 cup mayo
- 1 tbsp dijon mustard
- 2 stalks celery, diced small
- 1 shallot, diced small
- 1 tsp red wine vinegar
- salt and pepper to taste
