Aside from seeing my sister and nephew, chips mayai was what I was most excited for when I went to Tanzania. My sister had been telling me about it for months and I couldn’t wait. Chips mayai is Tanzanian street food that’s basically a french fry omelette. Potatoes are fried in a big wok-looking pan, then diced onions, green pepper, and carrots join the party. Scrambled eggs are poured in and cooked until set. Served plain or topped with chili sauce and ketchup.
½ an onion, diced small
½ green pepper, diced small
1 carrot, diced small
1 potato, cut into fry shape and baked (or use frozen french fries if you want to make life easy)
3 eggs, scrambled
Oil of choice for pan
Heat oil in a non-stick pan over medium-high heat. Add the vegetables and cook until tender, 3-4 minutes. Add the french fries and cook for another minute or two.
Lower the heat to medium and pour the eggs in. Using a rubber spatula, gently push the eggs up, allowing liquid egg to run into its place. When the bottom of the egg is set, quickly flip it over to cook the other side. This should only take a minute or two. Transfer to a plate, top with ketchup or hot sauce, and enjoy!
