I’m over January. It’s dark and cold and I felt like I needed something fresh and bright to spice up my week. And so this Mediterranean inspired flatbread was born. Puffy flatbread, creamy hummus, crisp red onion, and piles of fresh herbs rained down over top, this lil guy is sure to brighten up any mid-month slump.
1 ball of pizza dough (bag? Package? I got it at Trader Joe’s)
1/2 cup hummus (I used roasted garlic flavor)
1 zucchini, chopped and roasted
1/2 red onion, sliced as thin as you can
1/4 cup olives (whatever kind you want, lady’s choice) rough chopped
1/4 cup mint, torn
1/4 cup parsley, rough chopped
A couple of lemon wedges
Preheat your oven to 400 and roast your zucchini with a little olive oil, salt, and pep. While those are cooking you can chop all the other ingredients. Once the zucchini is done, maybe 15 minutes, take it out and turn the oven up to 450. Roll out your pizza dough in a big oblong blobby oval shape. Bake for 8-10 minutes. Let it cool for a few minutes until it’s a little warmer than room temp. Spread a layer of hummus over the surface. Sprinkle the roasted zucchini and red onions over top. Get the olives on there too. Rain those fresh herbs over everything like the piles of snow that still haven’t melted in the parking lot. Hit it with salt and pep. Squeeze some lemon juice over top. Cut it up into pieces and get it there!
